I almost returned the pan until I leaned how to cook with it and now love it.I use (~2 tablespoons) olive oil, ~1 tsp. Kosher Salt, and 2 paper towels in a clump, to clean it every time.I use Smart Balance (lots) to cook with like french toast, eggs, etc.. or some olive oil and water to steam/cook stir frys.Put butter in pan and 3/4 high heat, very hot, you need it for the food not to stick, and get a metal type spatula (plastic will melt). Turn off heat when your food is 1/2 to 3/4 done, the pan stays hot for a long time, and cooks evenly.Edit: 1/12/2013 I forgot to mention that this pan is huge (big, ect..) it is just what I wanted, one pan to do all and it does and replace my coated cheap pans I have to keep on replacing (due to the non stick coming off, burning off, scraping off, etc.. and the non sticks can not take the heat that this pan can). Very heavy and made extremely well!The cover is great, fits perfect (don't know what else to say about a cover)I was skeptical about a stainless steel fry/saute pan and now very very glad I stuck with the learning curve on it!This is a very nice heavy (not the extreme so you cant lift it), best pan I've seen, the other brands were thinner and lighter, it is a lot of money but this will last you forever and ever if taken care of (like any pan).

I bought my wife a set of Viking cookware for christmas a year ago. The one missing piece was the saucepan. She absolutely LOVES the hardware and has driven her to cook more.

They hold heat so well, cook with less water, less time and clean so easily. Even if you mess up and burn them, everything comes right out. I love all my Viking pots + pans. Every single one of them.
