Product Description

Shun Classic knives are beautifully finished and constructed from only the finest materials. Shun Classic Knives feature 16 layers of high-carbon stainless steel pounded to 3/1000th of an inch and clad on each side of a VG10 super steel core, producing a 33-layer, rust-free Damascus pattern. VG-10 is a unique formulation of steel with a high carbon content resulting in harder steel able to hold a shaper edge for a longer time. The cutting edge is then ground to an angle of 16 degrees, making the knife extremely sharp. The result is an edge that is both long lasting and incredibly sharp. The handle is made from ebony- colored PakkaWood, a fused blend of hardwood veneers imbued with waterproof resin that combines the warmth and traditional look and feel of wood with the strength and durability of plastic. The Shun series kitchen knives are manufactured by KAI Corporation, which has been one of Japan's premier blade producer for more than 90 years with factories located in Seki City, Japan's famous samurai sword-making center.

5Not cheap, but works beautifully for certain jobs.

I just got this on friday. Designed for slicing roasts and other large cuts of meat, it has distinct limitations. It is very long, and has no tip, so don't try and use it for any sort of chopping, only slicing as recommended. When carving a flank steak against the bias, it did a wonderful job, allowing me to create thin and even slices, much thinner than with a (non shun) carving knife I have, or than what I can do with my shorter shun knives. The ability to cut in a single stroke reduces the tearing that occurs to meat, losing less juices. Don't try and carve turkey with it, as the rounded tips is awkward. And it does a mediocre job on bread, due to no serrations. However, on roast beef, ham, pork shoulder or large steaks, nothing can do a cleaner job. Looks great when cutting at the table too, and the hollows really do help stop the meat from sticking.

This knife is so sharp that a razor is dull by comparison. It shaves meat. I have carved ham and beef with it and it's a dream.

4amazing knife

just purchased this knife, it was not my first shun. i wont repeat what others said, and i would have given it a 5 stars if it wasnt for a minor annoyance.i have the 22 slot shun block, which i bought by itself, with the intent to fill it with shun knives. the top slot is about 12" long, but this knife actually is just a little too long it sticks out the holes in the bottom. i may add some 1 inch legs to the bottom of my block to make it fit the block without hitting the counter underneath. you COULD store it nicely on a magnet but i am not a fan of those and currently have no where to mount one. but even if you mount one you will have to make sure you have enough room for such a long blade its probably 16-17 inches in total length (dont know exactly just an estimate) and my kitchen wouldnt have any area thats tall enough between the counter and the cupboards.now the obvious solution is keep it in a box in a drawer... but heck, this box is long, most kitchen drawers wont fit it. and that brings me to another point.my box came damaged, the bottom piece was ripped on one side, and the tape seal was cut... it was not a sealed item which at first really angered me. but after inspecting the knife, it still looked brand new and likely happened during handling on amazon's end.and the knife does NOT come with the black "sheath" that other shun knives i bought all came with either, it just comes in a really cheap clear plastic packaging (within the nicer shun box) that is borderline blister pack... this isnt that ideal for storing the knife in at all times in a drawer.but for now until i at some legs to my block, its gotta be stored in plastic packaging.but i guess i should have anticipated this when ordering a 12" knife. if you want to store your slicing knife in a block i might suggest you look at the shorter shun classic slicing knife.
