Product Description

Stepped up a little from the traditional parer the 4-1/2-inch utility has the feel of a parer with a slightly longer blade for slicing fruits and vegitable as well as small meat cuts. The Wusthof Classic Ikon is culmination of all the best features of each of the Wusthof knife lines. The combined riveted handle design is combined with a contoured shape to add comfort and control. Classic Ikon adds a rear bolster that acts as a counter balance when using the knife. This second bolster adds significant blade control. Classic Ikon has a unique forward bolster as well. The forward partial bolster is designed so you can sharpen the complete length of the blade. This bolster is also curvered inwards to allow your fingers greater control while holding the knife by the blade. Located in The Cutlery Capital of the World, Solingen Germany, the Wusthof factory history goes back as far as 1814 when the company was listed with the Duchy of Berg. To this day, the company remains family owned. Throughout it’s history, Wusthof has focused almost solely on the manufacturing of forged knives for the professional chef and home cooking enthusiast. Wusthof uses a special blend of German steel through out the whole length of the knife. The ingredients of this steel are proudly etched on each blade. Wusthof not only uses the best materials to make a fine knife, but it is also crucial that each blade is precisely tempered. This tempering allows the knife to hold its edge for an extremely long time, yet still be able to be maintained in your home kitchen with out the need to be sent away for maintenance. Our unique compound angle is not seen in many knives. This angle tapers from the spine of the knife to the edge to allow for a sturdy, yet extremely sharp edge while it also tapers from the bolster to the tip to give the knife strength as well as flexibility.

5Even better than the "Classic"

Wusthof knives are really good. The steel is great, takes an excellent edge, and holds it well. (in my experience, and I own 10 of them) All the forged knives use the same steel, so what's the difference with the Ikon line? The handle is well done, with a back "bolster" that balances the knife, making it feel light in your hand. But the innovation is in the tapered bolster at the blade. Now, a bolster strengthens the blade, which is good, but it also makes it hard to sharpen the last bit. Over a long life, this will also produce a dip as you lose metal on the blade.The tapered bolster on these knives enables you to sharpen and use the whole blade. On this utility knife, that translates to a nice bit of edge control when paring and peeling small vegetables. This might be a small thing to you, and that's fine. But it's a small thing that combines with the other elements to make this a superb product that you will treasure for years, and use a lot, for its superb utility and beautiful design.Finally, it certainly isn't cheap, and there are many fine blades that you can get for half the price. As always, it's dependent on what it's worth to you, but I think it merits consideration, because the quality and design are so good.

5A dream knife

The knife feels perfect in my hand - and the edge is so sharp - I'm a bit worried that I'll mess it up when I sharpen it, although it has been performing perfectly for weeks without sharpening. Not to mention the fact that it is beautiful to look at. A friend talked me into buying a "good" knife; I'm so happy I listened to her.

5Great quality for a knife snob!

I've bought everything from Henkels 5 star to Global and the Ikon series are the best knives we've ever had. This is my wife's favorite and mine is the Santouku 8". They are super sharp but feel incredibly sturdy in your hand. They feel ergonomic and comfortable all at the same time. We've had them sharpened once at a great little shop here in Kansas City and they guy said it's one of the better knives he's sharpened in a long time. We add one to our collection about once every quarter and couldn't be more happy. These are hopefully the last great knives we will have to buy for many many years down the road. I expect these to get passed down!
